SIMPSON’S ZUCCHINI FRITTERS
Ingredients:
- 1 1/2 c. flour
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 c. milk
- 1 egg, beaten
- 1 c. zucchini, shredded
- Oil for deep frying
Prepare:
In bowl mix first 3 ingredients. Mix milk, egg and zucchini. Add to flour mixture; mix. Drop by tablespoon into deep heated oil. Fry 3-4 minutes (golden brown). Serve hot.

Wow … zucchini fritters …a new way to have zucchini. I am going to substitute
rice flour for the flour and soy milk for the milk as I am gluten and lactose intolerant and egg beaters for the eggs. I will come back and post if it works out. I have done this before and it has.

I do not think this is a problem at all and I have done this many many years ago when my children were small. I had 3 children who could not have milk at all and one who could only have soy. The other two could drink goat milk but one could only have soy products and to this day she still can not have any milk products at all.
