SPICY RED HOT CUCUMBERS
This is a nice way to make canned cucumbers and adds a different flavor to them. It is a spicy picked cucumber.
Ingredients:
- 2 gallons cucumbers
- 2 cup delime
- 8 1/2 quarts water
Prepare:
Peel, slice and core cucumbers. Mix cucumbers in this. Let stand 24 hours. Drain rings and wash in cool water. Pour cold water over rings and soak 3 hours. Drain and add: 1 c. vinegar

ICED CANNED CUCUMBERS
Cucumbers are excellent in the summer for canning. This makes a nice cucumber pickle to be eaten anytime.
Ingredients:
- 4 quarts cucumbers, slicked not peeled
- 6 med. onions, slicked thin
- 1 clove garlic
- 1 green pepper
- 1 red pepper
- crushed ice
- 1/2 cup white sugar
- 3 cups vinegar
- 1 1/2 tsp celery seed
- 2 tbsp mustard seed
- 1 1/2 tsp turmeric
Prepare:
Put cucumbers, onions, garlic, green and red peppers together. Add crushed ice and 1/2 cup salt, let stand 3 hours, stir up good. After 3 hours, drain good. Put sugar, vinegar, mustard seed, turmeric, celery seed on to boil, add top ingredients and boil until cucumber slices are transparent. Seal up in sterilized jars and lids.

CANNED ZUCCHINI
If you have your own vegetable garden such as I have this is a wonderful way to have fresh zucchini year round. I love canned zucchini in the winter.
Ingredients:
- 10 to 15 large zucchinis cut but not pealed into chunks
Prepare:
Wash zucchini but do not peel. Cut into 1-inch cubes. In large cooking pot steam, covered, in small amount of water for 2 minutes. Pack zucchini into clean jars, adding 1/2 teaspoon salt for each pint, 1 teaspoon salt for each quart. Fill to 1/2-inch of top with boiling water (using juices from cooking as part). Adjust jar lids. Process at 35 pounds pressure 25 minutes for pints, 30 minutes for quarts.

CANNED STEWED TOMATOES
Ingredients
This takes about 30 tomatoes, scaled and cut up to make. It is great for winter when fresh tomatoes are out of season.
- 3 green peppers, chopped
- 3 onions, chipped
- 6 stalks celery, chopped
- 2 tbsp. celery salt
- 4 tbsp sugar
- 1 tsp salt
Prepare:
(Adjust amount of green peppers, onions and celery to your tastes.) Mix together and pack in sterilized jars. Wipe jar tops, remove air bubbles and seal! Process 45 minutes in boiling water bath.

CANNED GREEN TOMATOES
This is an easy way to have canned green tomatoes during the winter. Many meats and chicken are prepared with green tomatoes. It adds flavor to the food. Spices maybe added such as parsley, thyme, oregano to spice up the food. With these tomatoes; experiment with your spices creating new dishes
Prepare:
- Slice green tomatoes and put in crock. Put handful of salt over top. Pour boiling water over; enough to cover. Let stand 1 hour or longer. Drain. Pack in jars, drain. Fill jars with boiling water. Cold pack until water starts to bubble inside jars. Remove from heat.

CANNED DILLY GREEN TOMATOES
This is an excellent way for canning your tomatoes. It adds flavor to them. During the winter these can be used in cooking some of your meats. I especially like to use these when I slow cook a pot roast. It adds flavor to the meat when it is cooking. I normally take a few whole cloves of garlic and cut holes in my roast and stuff them in. Pour the canned tomatoes over the top and put in the slow cooker for 4 to 5 hours.
Ingredients:
- Select enough tomatoes to fill quart jars (depends on how many quart jars you are canning at the time.)
Prepare:
Select small, firm green tomatoes. Wash and pack in sterilized quart jars. To each quart add one clove of garlic, one hot red or green pepper and one head dill. For about eight quarts: combine 2 quarts of water, 1 quart of cider vinegar, 1 cup salt. Cook solution five minutes. Fill jars to 1/2 inch from top. Seal.

CANNED CUCUMBERS AND TOMATOES
Ingredients:
- 1 qt. cucumbers, diced
- 1 qt. tomatoes, diced
- 1 pt. onions, chopped fine
- 1 pt. vinegar
- 1 pt. sugar
- 2 sweet peppers
- 1 hot pepper
- 1 tsp. salt
- 1 tsp. pickling spices or more tied in a cheesecloth
Prepare:
Mix altogether and cook for 1 hour. Put in pint size hot jar. Seal and process for 5 minutes. The mixture should be thick after cooking, if not cook a little longer. Good with hot dog, and vegetables.

CANNED CUCUMBER CHUNKS
This is a nice cucumber pickles recipe. The cucumbers when in season can be canned and stored. You have cucumber pickles all year round.
Ingredients:
- 10 cucumbers, cut into chunks leave skin on
- 6 onions, sliced
- 1/2 cup salt
- 2 cups vinegar
- 2 cups water
- 1 tbsp. celery seed
- 1 tbsp. mustard seed
- 1 1/2 cups sugar
- 1 tsp. giner
- 1 tsp. turmeric
Prepare:
Combine cucumber chunks, onion slices and salt and let stand 2 hours. Drain. Combine remaining ingredients and bring to a boil. Place cucumber and onion mixture in hot sterilized jars. Pour the boiling liquid over cucumber mixture to fill each jar. Seal. Makes 6-8 pints.
